Another recipe I failed to get a picture of. I need to get on the ball with my camera! This one does have some wow factor too. I had never had baked eggs before, Hubs had not even heard of them. But I will definately be making them again.
To start I preheated the oven to 350F, and I greased a cast iron skillet with some bacon grease and let it preheat too.
I took 4, 3 inch thick slices of the sourdough and using a grapefruit spoon, gouged out a hole big enough to hold an egg in each slice. Be careful not to go completely through. You're really making a bread bowl for the egg to bake in.
In the bottom of each hole I placed a pat of butter, maybe 1 tsp, and sprinkled some parmesan cheese. When the oven and pan were to temp I cracked an egg into each sourdough bowl and topped with another pat of butter, sprinkle of parmesan cheese, and some cracked black pepper. I placed all four slices into the cast iron skillet that I had greased with bacon fat and baked them at 350F for about 25 minutes. I wanted the whites thoroughly cooked and the yolks runny. To top the eggs I warmed some left over green chile sauce. So many things would work though, You could use salsa, alfredo, and pesto would be especially good!
I ended up over cooking the yolks slightly so next time I will keep a closer eye on the eggs and maybe pull them out at 20-22 minutes.
